Radjou does more than accommodate the dietary requirements of staff and students, said campus minister Beth Derringer. "He spoils us," she said. "We are very blessed to have him."
"It would be easy to put fish sticks on the menu, but Radjou is elevating fish Fridays at Roanoke Catholic to a new level. He said students have been very receptive to the recipes he has chosen, which have included dill-crusted salmon, braised tilapia with lobster sauce, shrimp etouffee and shrimp creole over rice."
My wife and I visited your hotel whilst on a US road trip in November/December last year. We are from the North West of England and really enjoyed our time in the USA, which included a drive down the Skyline Trail and two nights with you in Roanoke.
As you can imagine, we ate out an awful lot during our three weeks and tried everything from an extremely expensive thanks giving dinner, through to IHOP, fresh fish in the Keys and plenty of waffles. Out of all of the meals which we had, there is one dish which my wife enjoyed more than anything else, which was your Mandarin Kale Salad with Grilled Chicken.
Having been back in the UK for a couple of months, my wife still tells everyone how nice this dish was and we have found a local restaurant who have agreed to try and recreate it for us.
We wonder if you could ask your chef for any additional information about the preparation of this salad, please. It really would make a couple of Holiday Inn regulars very happy.
P.S. Your barman also made my wife’s holiday complete by asking her for I.D. to prove she was 21. She is in fact 48 and very very happy that someone thought she looked so young.
